Graham Balls/Candies


Oh this is a sure hit to children and to everyone with the sweet teeth!

I loved it the first time I've tried it. I asked for the ingredients. Now, I'm patiently making them for sale at school.

Ingredients:
400g crushed Graham
387g condensed milk
marshmallows
sugar (or anything you want to coat it with)

1.) Mix the crushed Graham with the condensed milk in a big bowl.
2.) Make it into a big ball.
3.) Get a small piece (not too small) then flatten it. Put a marshmallow then make it into a ball.
4.) Put sugar (or coating) onto a plate.
5.) Roll the ball onto the coating.
6.) Repeat the process until done.
You can serve it in a colored cellophane or just put it in a plate with M&M's (for presentation).

ENJOY!

I was able to make 89 balls last night and sold all of them today. The kids still wanted more though.

If you're a mom, let your kids join in with you. It's fun.

Chinese Garlic Chicken

I'm sorry I don't have a picture. I'll post it soon if I make soon. hahaha!

This recipe is my favorite since GOD has talked me into having cooking as my passion when I was introduced to this dish.

The first time I made this, when my mom was away for a seminar, my dad ate all of it. It is then I told myself that I love to fulfill other people's tummy with good food. One way to minister, too. For the greater glory of GOD!

Ingredients:
1 kilo chicken breasts, deboned and sliced into bite-size pieces
oil for stir frying

For the marinade: Mix
1 tbsp oyster sauce
1 tbsp soy sauce
1/2 tsp salt
ground peppercorn to taste

For the garlic mixture: Combine
4 cloves garlic, finely minced
green onions, finely chopped
sesame oil (a few drops)
2 tbsp light soy sauce
1 tbsp dry sherry or cooking wine (optional) <~I never used this hahaha!
1/4 tsp chili paste

1.) Marinate the chicken for about 25 minutes.
2.) Heat oil in a wok and stir-fry the marinated chicken for two minutes.
3.) Add garlic mixture and continue to stir-fry on high heat for about three minutes. Serve hot.

I got this recipe from "Your Favorite International Cuisines" by Noel Young.

If you don't like wine and chili paste in it, don't use them. They'll be just fine.

I don't use them. hehehe! I have this pet peeve with wine used in food because of the smell. But then, it can taste good at first, after a while, it gets old (not literal hehehe). Tried it in some recipes in Culinary school. Whatever's your style.

Ok I didn't make this but my mom did. I liked it a lot! It was different.

Those who love sardines and raw mangoes, this will tickle your taste buds. Asian Fusion.

Ingredients:
1 can of sardines
raw mangoes, preferably sour ones (diced)
tomatoes (chopped)
onions (chopped)
garlic (chopped)
cooking oil (whatever oil you use)

1.) Saute´ garlic and onions in cooking oil.
2.) When garlic and onions are cooked, put in the sardines. Let it simmer for 5 minutes.
3.) Put in the tomatoes and mangoes. Simmer for 3 minutes.

That's all. Yes that's all. Easy, huh? You can put in other seasonings or ingredients. Experiment. And you gotta love the word 'fusion' when it comes to culinary. hehehe!

Bacon Water Chestnut Rolls

This is a recipe I found online and we made it as an appetizer for my graduation ceremonies in Culinary Institute of Aristocrat here in the Philippines. My partner, Ate Susan, and I were assigned for the appetizers. This is a good recipe, I tell you. My sister, who was with me for my graduation, ate about 5-6 rolls. hahaha! Pretty much for a small person like her. hehehe!

I do not have a photo of the dish because it's stored in my sister's phone and she's not living with us so haven't been able to get my graduation photos yet. So I'll just borrow a photo from the website I got it from which is AllRecipes.com



INGREDIENTS (Nutrition)
1 (8 ounce) can water chestnuts, halved
1/2 pound sliced bacon, cut in half
1/4 cup mayonnaise
1/2 cup packed light brown sugar
1/4 cup tomato-based chili sauce

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Wrap each water chestnut with a piece of bacon. Place the rolls seam-side down in a baking dish.
3. Bake in the preheated oven for 30 minutes, or until bacon is crisp and cooked through. Drain off the grease. In a small bowl, stir together the mayonnaise, brown sugar and chili sauce; pour over the bacon-chestnut rolls. Return to the oven and bake for another 30 minutes.

Filipino-Style Spaghetti

I don't know about you but I want it sweet! hahaha!

Although, I love 'Old Spaghetti House' spaghetti, I'd still want the ordinary, sweet, Filipino-style spaghetti most of the time...especially my mom's recipe! Passed down to me. Here it goes:


~~~My birthday spaghetti~~~

Anyway...before cooking, please read the recipe first! Just a warning. hehehe!

Ingredients:

chopped garlic
chopped onions
hotdogs (sliced in whatever shape/size you want)
1 kilo/half kilo ground beef/pork
Del Monte Sweet-style/Filipino-style spaghetti sauce (560g/750g stand-up pouches)
Tomato sauce (1 cup=560g spaghetti sauce, 2 cups=750g)
3-4 tbsp sugar to taste
1 tbsp salt to taste
seasonings to taste (whatever you wish such as pepper, thyme, rosemary etc.)
Spaghetti noodles
4 tbsp catsup/ketchup (whatever spelling hahaha)
grated cheese to taste

1.) Boil the ground beef/pork for 20 minutes or so. Boil the spaghetti noodles, too, in a separate pot.
2.) Fry the hotdogs for 5 minutes.
3.) After boiling the ground beef/pork, saute the garlic in a big enough pan or pot, then onions, then throw in the ground beef/pork.
4.) When ground beef/pork is cooked, put the hotdogs in. Stir constantly.
5.) When everything is smelling good and cooked, put the spaghetti sauce. Mix.
6.) After 5 minutes, put in the tomato sauce.
7.) Put in the catsup, salt, sugar, seasonings and then cheese. Stir.
8.) Ready to serve after cheese has been melted.

Chicken ala King

I've been reading blogs about food. Now, I gotta induce my career passion once in a while in this blog. Tonight, my mom let me cook dinner again. She forced me. hahaha! I gotta admit I feel that it's a wonderful achievement whenever I cook. I love feeding people with good food and I put my heart in it. It is a GOD-given passion.

Ingredients:

1 tetra pack of All-Purpose Cream (I use Nestle)
chopped garlic
1 tablespoon of butter
salt to taste
Magic Sarap (seasoning in the Philippines)
chopped chicken breasts
1 tablespoon of cooking oil (whatever you wish)

1. ) Saute chopped garlic in butter.
2.) Put the chopped chicken breasts in after the garlic has browned a little then put the cooking oil.
3.) Let the chicken cook.
4.) When the chicken has been cooked already, put the cream.
5.) Put salt and seasoning. Simmer a little.



That was so easy, huh? hehehe! Hope you enjoy. You can also put whatever seasoning you want. Experiment and love what you're doing. This is my mom's recipe. I love her recipes! Here is one recipe you can try anytime since moms have a difficulty of thinking what to cook for their families.

My sister loved it! She never stopped praising it. hahaha!
