Spicy Sausage Casserole


I got this from AllRecipes. Although, I have altered some of the ingredients because some weren't available in our grocery store but then it was still yummy. Must have been the heart. hehehe!

Anyway, I'd love to share with you my own recipe. hehehe!

Since Filipinos would definitely serve dishes (ulam as what we call it) and rice separately, this recipe originally called "Spicy Sausage and Rice Casserole" has been Spicy Sausage Casserole only. Rice is a staple food for us so the rice was also in the meal. No doubt. hehehe!

Ingredients:

1 red bell pepper (chopped)
1 green bell pepper (chopped)
3 cloves of garlic (minced)
1 onion (diced)
1 teaspoon of ground black pepper
6 tomatoes (chopped)
German Frankfurters (chopped)
1 mug of chicken broth
1 1/2 tablespoon of oil



1.) Put the cooking oil in a pan then cook the frankfurters as it turns brown.
2.) Saute in the garlic and onion. Cook for 3 minutes.
3.) Put the tomatoes. Cook for 3 minutes.
4.) Put the red and green bell peppers. Cook for 3 minutes.
5.) Pour in the chicken broth. Let it simmer for 5 minutes then sprinkle the ground black pepper. Simmer for 5 minutes until liquid has been absorbed.

A good one. Very yummy. At least for me. hehehe! I altered it so much, I guess. hehehe! Of course, we ate it with rice.

Homemade Crab and Corn Soup


This is my favorite soup. You can try and enjoy it, as well.

Ingredients:

crabmeat (slice into bite-sized pieces)
cream of corn (1 can)
cornstarch (1 cup)
water (10 cups)
seasoning (salt or spices - mine is Magic Sarap but only in the Philippines hehehe)
1 egg (uncooked)

1.) Boil the water in a pot.
2.) When the water has boiled, just cook in the sliced crabmeat for 5 minutes.
3.) After 5 minutes, mix in the cream of corn. Make sure to stir slowly.
4.) Mix in the cornstarch. (If the cornstarch isn't enough, add more but not too much as it accumulates after it's cooked. Makes the soup stickier. Cook and stir for 7-10 minutes.
5.) Get a fork. Crack the egg in the soup and gradually stir using the fork. Cook for 5 minutes.

Serve it hot.
